Thai Style Chicken Salad

Ingredients

  • 500g chicken breast fillets
  • 2 tblsps kecap manis
  • 250g asparagus, chopped coarsely
  • 1 carrot
  • 100g snow peas
  • 100g bean sprouts
  • 100g snow pea sprouts
  • 2 cups finely shredded cabbage
  • 2 spring onions, chopped finely
  • 2 tblsps slivered almonds, toasted
  • 1 tblspn sesame seeds, toasted
  • 3-4 tblspns My Thai Dressing

Method

Cook chicken in heated, non-stick fry pan until browned both sides and almost cooked through.  Add kecap manis to pan. Fry until chicken is caramelized and cooked through.  Cool chicken and slice thickly.  Boil or steam asparagus until just tender.  Cut carrot and snow peas into very thin strips.  Combine salad ingredients, top with chicken and drizzle with My Thai Dressing.  Sprinkle salad with nuts and seeds.
