My Thai Chicken Cakes

Ingredients

  • 750g chicken mince
  • 200g snake beans, finely sliced
  • 2 tblspns red curry paste
  • 1 tblspn vegetable oil
  • 1 tblspn fish sauce
  • 1 teaspoon sugar

Method

Combine curry paste, fish sauce, sugar, 2 tspns water in large bowl. Add chicken mince; stir until well combined & sticky. Add beans & mix thoroughly. Using wet hands form patties. Heat oil in a fry pan on high.  Cook chicken cakes for 2 min. ea side until golden all over & cooked through. Reduce heat to med. when cooking second side. Drain on paper towel.  Serve with steamed rice, lime wedges and My Thai Dressing.
